I know I've been absent for a little bit.
I’m having lots of crazy medical problems and I’ve been absent from everything, really. I haven’t even been able to do much yoga because of the physical issues.
Everything is being taken from me ):
On the plus side, I’ve been vegan for three weeks!

Well I’m out of town, and yesterday I was traveling. Everything I ate was just what was avaliable.. But here we go!
Breakfast:
Vegan muffin and an apple
Another apple and a some carrots
Snack:
Plain cheerios mixed with peanuts
Lunch/dinner:
A small salad with garlic lime dressing and 1.5 spring rolls
Late night snack:
(I felt famished for some reason)

Whole grain toast with almond butter and an apple
Lunch:
Brown rice with seasoning, italian green beans, and a bowl of strawberries
(I just grabbed random things from the fridge…)
Snack:
2 big carrots and a bowl of pineapple/blackberries
Dinner:
Baked tomatoes and asparagus in balsamic vinegar
Couscous with walnuts, apricots, honey

I'm so frustrated.
I am writing an essay to answer the oh so specific prompt, “Describe who you are.”
First of all, I am really uncomfortable writing positive things about myself.
Secondly, the only things that I can think of to write about are Yoga and Vegetarianism. I think that my past five essays have been about one or the other. I hate writing ):

Breakfast:
Toasted whole grain bread spread with almond butter, and a banana and blackberries
Lunch:
Brown rice with edamame and fresh pineapple on the side
Dinner:
Sweet potato and steamed vegetables with salt and pepper
Snack:
Cereal with strawberries and almond milk
It’s so cool to see how much I’ve improved with yoga in the past couple of months. Since I totally neglected this blog for a really long time, the posts are pretty old. And when I look back and see “I finally went into my first headstand,” it makes me so excited and proud because of how much more than that I can do now.

Half of a pita stuffed with lettuce, avocado, garbanzo beans, and tamari sauce

Kidney beans with onions, baked corn tortilla slices, and fresh diced tomatoes over brown rice

In my opinion, this is the greatest thing. It’s not really a diet, but more of a lifestyle change. Sure it’s called the “Engine 2 Diet,” but it is set up in such a way that it is supposed to stick. There is a 28 day challenge, and each week, an additional challenge is added.
